Vegan quinoa and blueberry pancakes

These were so good! And surprisingly came out really well. They are super easy to make and only takes about 10 minutes! 



Ingredients: 

•1/2 cup of gf oat flour (oats blended) 
•1/2 tsp baking powder
• 1 banana 
• 3 tbsp almond milk
•1-2 tbsp of Maple syrup/agave nectar m
•Blueberries 

For the yoghurt on top:

•1 tbs maple syrup 
• vanilla coyo 

Method 

1)  Fist put the oat flour and baking powder into a bowl and mix.
2)  Blend the banana, almond milk and maple syrup in a blender 
3)  add the dry ingredients to the wet and mix 
4)  Add the blueberries to the mix 
5)  heat your pan and spray with coconut oil spray or whatever you have at home to grease the pan
6)  place one table spoon of the mixture on the pan spread the mixture out in the pan to your preferred thickness and cook well on both sides 

The topping 

1)   just mix as much Coyo yoghurt as you want with a tbs of maple Syrup for sweetness 
2)  I added some more blueberries aswell
