Ingredients:
•1 can of cooked green lentils
• 3 cups of finely chopped mushrooms
• 1/3 cup of pine nuts
• half a onion
• 2 large handfuls of spinach
• 2 large hand fills of kale
• 1/2 tsp baking powder
• 3 garlic cloves
• 1/4 cup oat flour
• 1 Flax egg (tbsp ground flax+ 2 tbsp water)
• salt and pepper to taste
Method:
-preheat the oven to 190 degrees
- mush the lentils with a fork leaving some mushed and some not
- heat the pine nuts in a sauce pan with a little bit of olive oil until browned
- cook the mushrooms And garlic in a pan with some Olive oil..once browned, add the kale and spinage and sauté for another few minutes. Then add in the lentil mixture along with the pine nuts.
- in a separate bowl add the 3 tbsp of flax seed and 2 tbsp of water, mix until it forms a thick paste. Then add too the sauté mixture.
- you then add the baking powder, salt, pepper and oat flower.. Adding water if the mixture is to dry. It should be a sticky paste by this point.
- lastly roll the paste into balls and put on a baking sheet on a baking tray.. And place in the oven to bake for about 45 minutes.
