Chickpea salsa curry

My kind of comfort food..
Such a quick and delisious meal. Only takes about 15 minutes to prepare!


Ingredients:

•1/2 green pepper 
•1/4 chopped onion 
•1 crushed garlic clove 
•4 ears of baby corn 
•15 cherry tomatoes tomatoes 
•70g cooked chickpeas 
•1 tsp of stevia 

Method: 

- blend 10 of the cherry tomatoes in the food processer
- put the blended tomatoes in a large pan on a low heat 
- chop up the rest of the cherry tomatoes, onion, pepper and baby corn
and sauté in half of the garlic clove and oliv oil 
- add the sautéed veggies, other half of the garlic clove, stevia and the cooked chick peas to the tomatoe purée and leave on a low heat for about 5 minutes 
- add salt, pepper and any other herbs or spices you want 
- ready to serve! 

The sauce turned out sort of like a non spicy salsa so if you like your salsa spicy maybe add in some chili powder! 

This recipe serves 1
